Sıkma Köfte is one of the simple and common examples of bulgur köfte culture. It is usually made among home-cooked meals.
Dough prepared with bulgur, onion and spices is squeezed by hand to shape, hence the name 'sıkma' (squeezed). It is cooked boiled or in broth.
In Malatya, when köfte is mentioned, only meat köfte is not understood; köfte made with bulgur are also called by this name. Sıkma köfte is one of these examples.
